Need a quick meal that’s ready in a flash? Use all your favourite toppings on this crispy base, with lovely melted mozzarella on top.
Typical nutritional content (per portion)
2 wholemeal tortilla wraps or pitta breads
2 tablespoons passata (pureed tomatoes)
2 springs fresh basil, leaves only
½ teaspoon dried oregano
60g (2 sprinkles) low-fat grated mozzarella
½ red pepper, sliced thinly
½ green pepper, sliced thinly
½ red onion, sliced thinly
30g (handful) mushrooms, sliced thinly
30g (handful) sweetcorn
Pre-heat the oven to 200℃.
Spread the passata around the tortilla wrap or pita bread using the back of a spoon.
Sprinkle the oregano on top, then the toppings around (peppers, onions, mushrooms, sweetcorn).
Scatter the mozzarella on top and place on a baking tray. Bake for 6-8 minutes until the base is crisp and cheese is melted.
Tear up the basil leaves, scatter on top and serve straight away.
