Zingy Green Smoothie

Green smoothies are a tricky art from, get the balance of sweetness and bitterness wrong and you’re in for a bad time. Our version is perfectly balanced, and the heat from the root ginger gives it a great zingy kick. Will keep well refrigerated for 24 hours. If you’re new to green smoothies, start out by adding extra pineapple chunks for sweetness. Medjool dates can also give a deep caramel sweetness. Over time you can play with the balance of bitter versus sweet by adding more spinach.

Ingredients

200ml freshly squeeze orange juice
2 large handfuls baby spinach (about 100g), washed
Thumb-sized piece of root ginger, peeled and chopped
Quarter of a cucumber, washed and roughly chopped
Half an avocado, roughly sliced
3 tablespoons fortified soya yogurt
2 teaspoons milled flax seed

Method

Add all the ingredients to a blender and blend until you’re left with a smoothie consistency. Taste and any additional ingredients to taste.

Pour into 3 glasses or decant into bottles and enjoy.
