Tuna, Sweetcorn and Spinach Pasta

This pasta dish is also good served cold the next day if there is any left over and appeals to children and adults alike. It will keep for up to 2 days in the fridge. It can also be made with chilled leftover pasta. Simply mix everything together – it will still taste great!

Ingredients

350g (12oz) wholemeal pasta shapes

1 tablespoon olive oil

2 x 200g (7oz) tins sustainable tuna in spring water, drained and flaked

175g (6oz) tin sweetcorn kernels, drained (with no added salt or sugar)

100g (4oz) baby spinach leaves

Freshly ground black pepper

Method

Plunge the pasta into a large pan of boiling water. Stir once and cook for 10 – 12 minutes over a medium to high heat, until tender, or according to the instructions on the packet.

Tip the pasta into a colander and put briefly under cold running water to prevent it from cooking further and then drain again. Put the pasta back into the pan over a low heat and gently fold in the olive oil, tuna, sweetcorn and spinach until the spinach leaves are just beginning to wilt. Season lightly with pepper.

Put the pasta on to plates to serve.
