The secret to a great bruschetta is high quality tomatoes. Perfect for a light lunch or starter.
Typical nutritional content (per portion)
1 large ciabatta baguette, wholemeal if available
3 teaspoon of olive oil
200g cherry tomatoes, quartered
2 garlic cloves, peeled and finely chopped
2 tablespoons fresh basil leaves, chopped
1 teaspoon balsamic vinegar (optional)
75g reduced-fat fresh mozzarella, sliced
Preheat the grill at 300℃.
Cut the ciabatta baguette into 4 long slices. Brush the slices with 2 tsp of olive oil and toast bread for a few minutes until golden in colour.
Mix the tomatoes, basil, remaining olive oil, garlic and balsamic vinegar together in a small bowl.
Spoon the tomato mixture on to the warm bread slices, and top with a slice of mozzarella. Garnish with a few leaves of basil.
