Kids love helping to make up these parcels! If you have fresh lime or lemon to hand, they will enjoy squeezing the juice out!
Typical nutritional content (per portion)
4 x 175g (6oz) salmon fillets, skinned and boned
2 teaspoons ginger paste or fresh root ginger, grated
4 teaspoons shop-bought lime juice or finely grated rind and juice of 1 lime (or lemon)
2 teaspoons garlic paste or 2 garlic cloves, crushed
freshly ground black pepper
Preheat the oven to 190°C/375°F/Gas Mark 5. In a small bowl mix the ginger, lime rind, if using, lime juice and garlic. Take four pieces of tin foil or parchment paper about 27cm (11in) squares and place a salmon fillet in the middle of each one. Season lightly with pepper and spoon the lime mixture over. Fold the parchment paper or foil to make small parcels.
Place the parcels on a baking sheet and bake for 8 – 10 minutes or until the salmon is just cooked through and tender, this will depend on the thickness of the fillets.
Serve the salmon in their parcels on plates with baby boiled potatoes and the kids’ favourite veg!
